This Pizza Casserole is your favorite combination pizza turned into a casserole. It’s filled with chicken sausage, pepperoni, mozzarella cheese and a homemade pizza sauce-I mean who doesn’t like pizza in any form?

Enchilada Casserole made with Two Ingredient Dough
For this Pizza Casserole I like to use mild Italian turkey or chicken sausage. The reason I use the mild is because not everyone loves the heat of a spicy sausage. I also love using chicken sausage since it is lower points in comparison to turkey sausage. It’s 10 points for 1 pound as compared to 20 points for 1 pound of the Jennie-o lean turkey sausage.
Spray a large skillet with non stick cooking spray. Cook the chicken sausage on medium high and stir until the sausage is no longer pink and is lightly golden brown. Set aside and allow to cool.
In a large mixing bowl, add yogurt followed by the self-rising flour. Use a rubber spatula to mix together.
Add egg and mix until dough forms.
Flour your hands and work surface and begin kneading. Knead until you can easily form a ball, about 10 turns.
Roll dough into 14 small balls. And set aside.
Slice 23 turkey pepperonis into small bite size pieces
combine with pizza or marinara sauce
mix in mozzerella cheese, cooked chicken sausage and stir until well combined
Then fold in the dough balls into mixture.
Pour mixture into a lightly greased 3-quart baking pan.
Cook for 35-40 minutes or until dough is thoroughly cooked
Ingredients:
- 1 cup self-rising flour ( I use gold medal)
- 1 large egg
- 1/2 cup of plain nonfat Greek yogurt (this is mixed with the self rising flour and egg to make dough balls)
- 1 lb. Mild Italian Chicken Sausage ( I use Isernio’s Mild Italian chicken sausage)
- 23 pieces of turkey pepperoni, sliced into bite size pieces ( I use Hormel )
- 2 cups pizza sauce or 2 cups zero point marinara sauce
- 4 oz. fat free or light mozzarella ( I use Market Pantry reduced fat mozzarella from Target)
Directions:
- Preheat oven to 350 degrees.
- Spray a large skillet with non stick cooking spray. Cook the chicken sausage on medium high and stir until the sausage is no longer pink and is lightly golden brown. Set aside and allow to cool.
- Meanwhile, in a large mixing bowl, add 1/2 cup yogurt followed by the self-rising flour. Use a rubber spatula to mix together. It will be crumbly at first which is totally normal. Add egg and mix until the dough forms. If dough is too dry, add 1 Tbsp of non fat Greek yogurt. Mix until dough is formed.
- Flour your hands and work surface and begin kneading. Knead until you can easily form a ball, about 10 turns.
- Roll dough into 14-16 small balls. And set aside.
- In a large mixing bowl, combine sauce, pepperoni, and cheese. Stir until all ingredients are blended together. Add cooled chicken sausage and mix until ingredients are well incorporated.
- Then fold in the dough balls into mixture.
- Pour mixture into a lightly greased 3-quart baking pan.
- Cook for 35-38 minutes or until dough is thoroughly cooked.
Notes:
- I get the chicken sausage at my local Kroger store. If you are unable to find the chicken sausage, you can substitute it with 1 1/2 cup of Jimmy Dean fully cooked turkey sausage crumbles for the same point value.
