These Almond Poppy Seed Sheet Pancakes are so simple to make. I use the Kodiak Cakes Power Cakes Protein Pancake Flapjack and Waffle Mix, Almond Poppyseed , that can be found at most grocery stores next to the pancake and muffin mixes. You can also buy a six package on Amazon here

Or you could use the Original Kodiak Buttermilk Flapjack Pancake Mix and add 2 tsp almond extract and 2 Tbsp poppyseeds.

 

 

Ingredients:

 

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine eggs, water, and sugar substitute. Blend together.
  3. Whisk in Kodiak Buttermilk Flapjack Pancake Mix, poppyseeds, and extract.
  4. Pour batter onto a 12 x 17 baking sheet that has been sprayed with non stick cooking spray and spread to the edges.
  5. Bake for 18-20 minutes, or until golden brown.
  6. Cut into 12 large squares and serve immediately. Top with your favorite toppings.

    • 2 tsp almond extract
    • 1 1/2 Tbsp poppyseeds
    • 2 eggs
    • 1 1/2 cup water
    • 1 Tbsp zero point granulated sugar substitute ( I use Lakanto Classic Monkfruit Sweetener)

    Yes! They are the best! I have made all sorts of flavors using the buttermilk Kodiak pancake mix.

    You can substitute the chocolate chips for blueberries...or just your favorite ingredient to the base of the recipe!

    Do you think these would freeze well? Also, it's only me here, is it safe to assume I could halve this recipe?

    Yes, these freeze well. You can thaw in the fridge for a few hours and reheat in the microwave, oven, or air fryer.
