Blueberry Lemon Fluff

This Blueberry Lemon Fluff is super easy to make-and only requires a few ingredients! It’s easy, delicious and makes for the perfect potluck dish or dessert!

Makes 6 ( 1 cup) servings

Pumpkin Fluff Salad

To make this Blueberry Lemon Fluff you will combine the pudding mix, lemon juice, and  skim milk. Whisk until well blended.

Add non fat plain or Greek yogurt. And mix well.

Using a food scale, measure out 5 oz. fat free cool whip, then using a spatula fold the cool whip into the mixture.

Gradually fold in the blueberries.  

Chill in the refrigerator or serve immediately.

  • 1 package (1 oz.) sugar free instant Jello lemon pudding mix 
  • 1/3 cup skim milk 
  • 1 Tbsp fresh lemon juice
  • 3 cups non fat plain or Greek yogurt
  • 5 oz. fat free or sugar free Cool Whip, thawed
  • 2 cups frozen ( thawed) or fresh blueberries
  • lemon slices (optional garnish)  

Directions:

  1. In a large mixing bowl, combine the pudding mix, lemon juice and skim milk. Whisk until well blended.
  2. Add non fat plain yogurt. And mix well.  Using a food scale, measure out 5 oz. fat free cool whip, then using a spatula fold the cool whip into the mixture.
  3. Gradually fold in the blueberries.  
  4. Chill in the refrigerator or serve immediately.

I'm so looking forward to making this! I was entering all the ingredients into the WW App recipe creator, and I noticed something. For the Sugar Free Cool Whip, it says 5 oz is 14 points. But for the Fat Free Cool Whip, it says 5 oz is only 9 points. That makes the point total only 2 (at least for Blue) Yay!!!
