Sausage and Rice Soup

This Sausage and Rice Soup will become a family favorite! Throw in the slow cooker and you’ll have dinner ready when you get home!

Makes 8 (1 and 1/4 cup) servings

How do I make this sausage and rice soup?

Slice the smoked turkey sausage link into bite size pieces.

Spray a skillet with non stick cooking spray. Add sausage pieces, onions, minced garlic.

Cook on medium heat until sausage, onions are golden brown. 

Add sausage mixture to slow cooker. Add remaining ingredients.

Cook on low for 4-6 hours.

Makes 8 ( 1 and 1/4 cup) servings

Ingredients: 

  • 13 oz. smoked turkey sausage link ( I use Jennie-O Hardwood Smoked Turkey Kielbasa )
  • 3 garlic cloves, minced
  • 1/2 small yellow onion
  • 1 tsp Italian seasonings
  • 1 tsp dried oregano
  • 1 tsp parsley
  • 1/2 cup long white rice or brown rice, uncooked
  • 32 oz. beef stock ( I use fat free, low sodium beef stock)
  • 2 cups water
  • 2 ( 14 1/2 oz.) cans diced tomatoes, drained
  • 3 (16 oz.) cans red kidney beans, rinsed and drained
  • Fresh basil and 1 Tbsp grated Parmesan cheese ( optional) 

Directions:

  1. Slice the smoked turkey sausage link into bite size pieces.
  2. Spray a skillet with non stick cooking spray. Add sausage pieces, onions, minced garlic.
  3. Cook on medium heat until sausage, onions are golden brown.
  4. Add sausage mixture to slow cooker. Add remaining ingredients.
  5. Cook on low for 4-6 hours. 
  6. Garnish with fresh basil or grated Parmesan cheese for additional points.

Hello, this looks fantastic and I'm definitely going to try it. My comment is on the link to Personal Points. When I followed the link to my WW account, this recipe comes up as having 28 *cups* of tomatoes, not 29 ounces from 2 cans. I knew that 3+ points from non-starchy vegetables was too good to be true :-) Looks like it will be worth the points anyway!

All beans ( black, white, red, fat free pinto) are all zero point on the BLUE and PURPLE plan.
