How do I make these Two Point Soft and Chewy Snickerdoodle Cookies?
For the base of this recipe I use the Kodiak Pancake and Waffle Mix. You can find this pancake mix at most grocery stores by the pancake mixes or you can get a 3 pack online here on Amazon. It’s packed with 14 grams of protein and makes these snickerdoodles nice and soft.
I also use Land o’ Lake light butter. I have found that it has the lowest points and it tastes amazing! You can find it at most grocery stores next to the butter. It comes in a tub-with a green lid. Be sure that it says light butter-they sell one that is regular that is made with canola oil as well-so be sure to check that it says light.
In a large bowl, mix together Kodiak mix, baking powder, 1/4 tsp cinnamon and salt.
In a separate bowl cream together butter, non fat yogurt, vanilla, and 1/4 cup brown sugar. Whisk in egg and water until well combined.
Gradually add wet ingredients into dry ingredients. And stir until well combined.
Using your hands (I recommend that you flour your hands to keep dough from clinging to your fingers) roll dough into 1 inch balls. Roll dough balls in sugar and cinnamon mixture.
Place dough balls on a cookie sheet, that has been lined with parchment paper.
Bake for 7-9 minutes. Do not over bake otherwise they will be hard and not soft.

- 1/4 tsp salt
- 1 tsp cinnamon

- 2 Tbsp unsweetened applesauce
- 4 Tbsp Land o’ Lakes light butter, room temperature
- 2 Tbsp water
- 1 tsp vanilla extract
- 1/4 cup brown sugar unpacked or brown sugar sweetener such as Lakanto Golden Monkfruit Sweetener)
Topping Ingredients:
- 1/4 cup white granulated sugar
- 1/2 Tbsp cinnamon
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, mix together Kodiak mix, baking powder, 1/4 tsp cinnamon and salt.
- In a separate bowl cream together butter, unsweetened applesauce, vanilla, and 1/4 cup brown sugar substitute. Whisk in egg and water until well combined.
- Gradually add wet ingredients into dry ingredients. And stir until well combined.
- In a small mixing bowl combine, 1/4 cup white sugar with 1/2 Tbsp cinnamon and pour onto a shallow plate.
- Using your hands (I recommend that you flour your hands to keep dough from clinging to your fingers) roll dough into 1 inch balls.
- Roll dough balls in sugar and cinnamon mixture.
- Place dough balls on a cookie sheet, that has been lined with parchment paper.
- Bake for 7-9 minutes. Do not over bake otherwise they will be hard and not soft.

Any reason why you don't use the Lakanto white sugar to roll in instead of granulated? Would I lower the points if you could? Love your recipes!

Using a sugar substitute for the sugar topping can create a mouth-cooling effect vs. using regular sugar. The overall point value per serving is the same regardless if you use Lakanto or sugar.

Hi Robin, You can replace the Kodiak pancake mix with self rising flour. Kodiak just has the extra protein but is similar in points and is an alternative to the pancake mix.

Glad I found you. At some point would you try to figure out how many calories in one cookie? I'm following Hungry Girl diet and it goes by calories per day. Recipes look amazing but I can't break my 1300 Cal per day. Thanks.
