Two Ingredient Dough Enchilada Casserole
For this BBQ chicken pizza I use G Hughes Sugar Free BBQ Sauce. It’s 0 Freestyle Smart Points per serving and add tremendous flavor to this BBQ

Ingredients:
- 1/2 cup plain non-fat Greek yogurt ( I use Fage or Chobani)
- 1/2 cup self rising flour ( I use Gold Medal)
- dash of garlic powder
- 1/4 cup Sugar Free G. Hughes BBQ sauce
- 2 oz. fat free or light mozzarella ( I use Kraft fat free mozzarella)
- 6 oz boneless skinless diced pre-cooked chicken tenders ( I use Tyson’s )
- ¼ cup finely chopped red onion
- 1 Tbsp finely chopped fresh cilantro
Directions:
- Preheat oven to 425 degrees.
- In a large mixing bowl combine, self rising flour, Greek yogurt and garlic powder. Mix until combined.
- Sprinkle a little extra flour on the tabletop or whatever surface you plan on using to knead the dough. Place the dough ball on top, kneading it with your hands. If it sticks to your hands, sprinkle a little extra flour on it. Knead for 8-10 times, until it’s a pliable dough
- Spread the dough out on a parchment-lined sheet. Using a rolling pin, roll the dough into a circle, about 10- inches wide.
- Spread BBQ sauce over the top of the rolled out dough, top with mozzarella cheese, pre-cooked diced chicken, cilantro, red onion.
- Cook for 10 to 12 minutes, or until the crust has puffed up and is lightly golden and all of the cheese has melted.
- Once cooled, drizzle a little more BBQ sauce on top.
Servings: Makes 8 slices
GREEN: 1 Smartpoints per slice.
BLUE: 1 Smartpoint per slice
PURPLE: 1 Smartpoint per slice
Tips on working with the Two Ingredient Dough:
- Use the thick Greek yogurt. The two Greek yogurt brands I recommend is Chobani or Fage.
- Use 2 Tbsp less of the non fat Greek yogurt than what the recipe calls for.
- Spray the rolling pin with non stick cooking spray prior to rolling it.
- Roll the dough directly on the parchment paper on the baking sheet.

Liberty, did you try making the pizza dough using the Kodiak buttermilk mix? If so, how did it come out? What did you/would you do differently if making it again? I have a couple of boxes of this mix and would love some new ideas for how to use it in a point-friendly manner!

I’ve never tried using Kodiak Mix for that before. You can give it a try-I would recommend adding 1/2 tsp of baking powder to the mix to help it rise better.
