What can I use to make the pudding for these Candy Corn Pudding Cups?

  • CarbMaster no sugar added milk: 2 cups of CarbMaster is 2 freestyle smart points and can be found at any Kroger store.
  • Skim milk: 2 cups of skim milk is 6 freestyle smart points.
  • Vanilla Premier Protein: Did you know a carton (11 oz.) of Premier Protein has 30g of protein, 160 calories, 3g of fat, and 4 grams of carbs?!  That means not only do these cups look adorable and tasty but they would be be packed with protein-which fills you up and keeps you satisfied.  You will use 1.5 cartons or 2 cups of Vanilla Premier Protein which is 3 freestyle smart points. 

    Even though each option has a different point value-the overall point value would not change per serving-so feel free to use any of these options.

Note: I do not recommend using soy milk or unsweetened almond milk-the pudding will not set with either of them. 

How do I make these Candy Corn Pudding Cups?

 In a medium mixing bowl, whisk together lemon gelatin mix and hot water until dissolved. Whisk in cold water for 2 minutes.

Pour 1/4 cup gelatin mixture into (4 oz.) serving glasses

Set glasses on a tray and place in the fridge for 4 hours or until gelatin is set.

Once gelatin is set, make pudding layer.

In a bowl combine 2 cups Premier Protein, skim milk, or Carbmaster no sugar added milk, and pudding mix.

Whisk until combined. Add 1-2 drops of orange food coloring. Stir until well combined. 

Pour 1/4 cup pudding over the top of the gelatin layer.  Repeat with all 8 serving cups.

Top with 2 Tbsp fat free Reddi Whip.

Ingredients

  • 1 ( 1.5 oz.) package sugar free Jell-o vanilla pudding mix
  • 1-2 drops orange food coloring
  • 2 cups or 1.5 cartons Premier Protein Vanilla Shake or CarbMaster no added sugar milk
  • 1 ( .3 oz.) package JELL-O Sugar Free Lemon Gelatin Mix  
  • 2 cups boiling water
  • 2 cups cold water
  • fat free Reddi Whip
