Ingredients:
- 3 oz boneless chicken breast, raw and diced
- 1 tsp sesame oil
- 2 cups frozen riced cauliflower
- 1/4 cup frozen peas
- 1/4 cup frozen corn
- 1/4 cup diced red pepper
- 1 large egg
- 1 Tbsp soy sauce
- dash of garlic powder
- 1/2 bunch of scallions
Directions:
- Spray a large skillet with non stick cooking spray. Add the diced chicken, cook on medium heat, until the chicken is no longer pink, about 5 minutes. Remove cooked chicken from skillet.
- Using the same skillet, scramble one egg and add 1 tsp sesame oil.
- Add riced cauliflower, corn, peas, red peppers, garlic, soy sauce and sauté for 2 minutes.
- Fold in diced chicken. Stir and sauté on low heat until all juices are absorbed.
- Add scallions and serve.
