Crockpot Lasagna Soup

This Crockpot Lasagna Soup is the classic comfort food in soup form-super easy and absolutely delicious! 

Servings: Makes 6 (1 cup) servings

How do I make this Crockpot Lasagna Soup?

Spray a skillet with non stick cooking spray. Cook lean ground beef on medium high 

stir occasionally until meat is no longer pink.

Pour cooked ground beef in crock pot.

Add diced onion, minced garlic, crushed tomatoes, tomato sauce and seasonings.

Pour beef broth and stir until all ingredients have been incorporated. Cover crockpot and cook on low for 5-6 hours

Cover crockpot and cook on low for 5-6 hours. Break 6 lasagna strips into bite size pieces and stir into crockpot.

 

 

Cover and cook on high for about 30 minutes until the noodles are soft.

Place 1 cup of soup in a bowl and top with 2 Tbsp fat free ricotta cheese, 1 tsp Parmesan cheese and fresh basil.

  • light mozzarella cheese
  • grated parmesan cheese

  • lb 96% lean ground beef
  • 1 tsp minced garlic 
  • 1 Tbsp Italian Seasoning
  • 1/2 yellow onion, diced
  • 1 (15 oz) can tomato sauce 
  • 1 (32 oz.) container beef broth 
  • 1 (28 oz) can of crushed tomatoes
  • 6 Barilla Oven-Ready lasagna noodles or whole wheat oven ready lasagna noodles if you're following the WW purple plan
  • Optional Toppings
  • fat free ricotta cheese

Could you make a suggestion for how long to cook this in the Instant Pot? 10-15 minutes?
