How do I make this Low Point Chipotle Black Bean Dip?

For this dip, I use these chipotle peppers in adobo sauce. It gives this dip a nice smoky flavor and a little bit of heat. You can find these in the Mexican area of most grocery stores. You will only use 2 of the peppers and 2 Tbsp of the sauce for this recipe. You will want to store the remaining peppers in an air tight container in the fridge.

I like to use Trader Joe’s  fire roasted frozen sweet corn for this black bean dip, it tastes fantastic with the chipotle chiles and black beans. You can also use regular frozen yellow corn or canned yellow corn that has been rinsed and drained.

You drain and rinse 2 ( 15 oz.) can black beans

 

And 2 ( 16 oz.) can fat free traditional refried beans

and 1 1/2 cups fat free salsa

For optional garnish: chopped cilantro, diced green onions, or light cheddar cheese and tortilla chips 

Ingredients:

  • 2 cups yellow frozen corn, thawed ( I use Trader’s Joe’s roasted corn)
  • 2 ( 16 oz.) can fat free traditional refried beans
  • 2 ( 15 oz.) can black beans, rinsed and drained
  • 1 1/2 cups fat free salsa ( I use Trader Joe’s Homestyle Salsa Especial mild fresh salsa)
  • 2 chipotle peppers in adobo sauce, chopped 
  • 2 Tbsp adobo sauce 
  • For optional garnish: chopped cilantro, diced green onions, or light cheddar cheese and tortilla chips for additional points

Directions:

  1. In a slow cooker mix together beans, corn, salsa and chiles with sauce. Cover. 
  2. Cook on low for 3-4 hours, stirring after 2 hours. 
  3. Sprinkle with cilantro, diced green onions and/or cheese if desired. 
  4. Serve with tortilla chips, low point crackers or vegetable of your choice.

Thanks so much for the wonderful review! Yes, this dip can be stored in an airtight container and frozen for up to 3 months. Just thaw overnight and reheat once it’s thawed out.
