This stack of delicious Pumpkin Pie Pancakes are the fluffiest, quickest, and the most delicious pumpkin pancakes ever!

Servings: Makes 9 pancakes

How do you make these Pumpkin Pie Pancakes Fluffy?

The key to making these pancakes nice and fluffy is beating 2 eggs whites together.

 Did you know that egg white when beaten really well-create a foam like texture? That is what makes these pancakes thick and fluffy.

Therefore this is a critical step to ensure the pancakes turn out thick and fluffy.

 until they are are nice and foamy.

Then in a separate mixing bowl combine the remaining ingredients. Whisk until all ingredients are incorporated.

Gently fold in egg whites. 

Spray a non stick skillet with non stick cooking spray and heat skillet on medium high.

Using a 1/4 measuring cup, scoop pancake batter onto prepared skillet, making 4 inch pancakes.

Cook pancakes on medium high until little bubbles start to form at the top of the pancakes. About 2-4 minutes.

Flip and cook for an additional 2-4 minutes or until lightly golden.

 

 

Ingredients:

  • 2 egg whites
  • 2/3 cup self rising flour  ( or 1/2 cup kodiak buttermilk pancake mix combined with 1/3 cup Devotion Nutrition or Quest protein powder)
  • 1/2 cup canned pumpkin
  • 1/4 cup water
  • 1 egg
  • 1 Tbsp zero point granulated sugar substitute  ( I use Lakanto Classic Monkfruit Sweetener) 
  • 1/2 tsp pumpkin spice ( I use Dak’s pumpkin spice)
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract

 

Directions

  1. In a large mixing bowl combine, 2 egg whites and using a hand mixer, beat until nice and foamy. 
  2. In a separate mixing bowl combine the remaining ingredients. Whisk until all ingredients are incorporated.
  3. Gently fold in egg whites. 
  4. Spray a non stick skillet with non stick cooking spray and heat skillet on medium high.
  5. Using a 1/4 measuring cup, scoop pancake batter onto prepared skillet, making 4 inch pancakes.
  6. Cook pancakes on medium high until little bubbles start to form at the top of the pancakes. About 2-4 minutes. Flip and cook for an additional 2-4 minutes or until lightly golden.
  7. Top with 4 Tbsp of fat free Reddi Whip and 3 Tbsp Mrs Butterworth’s sugar free syrup for 0 points, and sprinkle a little cinnamon over the top, if desired.

    Are Quest Protein Powder and Devotion Nutrition protein powder interchangeable? Why do you choose one over the other in certain recipes?

      Yes. You can use either one. I used to use Quest in most my recipes until I tried Devotion. I prefer Devotion over Quest for the flavor and texture. Thanks

    I added these items into the receipe builder, for me it came to 3 pts for the whole thing… is the Kodiak 1/4 or 1/2? If I up the Kodiak to 1/2 it changes the pt value to 5pts for all.

      Hi Stevie,

      The 1/4 cup Kodiak Cakes is 2sp and for 2 scoops angel food cake protein powder it’s 3sp. Those are the two ingredients that make up the recipe. The remaining ingredients are 0sp, therefore the entire recipe is 5sp. Does that make sense?!

      Yes, if you were to use just 2/3 cup of kodiak cakes and made 6 pancakes they would the same point value. which is 1 point a per pancake.

    I am so confused…I don’t see any protein powder in the recipe. Why is everybody talking about protein powder?

      Hi Diane,

      Sorry for the confusion. Adding protein powder is optional if you want to use that along with Kodiak pancake mix if you wanted, as a substitute for the self rising four.

    I must be blind but I don’t see protein powder or Kodaik listed in the ingredients when I started to Pin recipe. Now I’m totally confused. Sorry to be so much trouble!

      I had updated this recipe to include other options to make the pancakes with. The pancakes can be made with either 2/3 cup self rising flour or 1/2 Kodiak Pancake mix combined with 1/3 cup protein powder. (protein powder is thin and therefore you’d want to use 1/2 cup of kodiak pancake mix rather than 1/3 cup.)

      Hi Patricia,

      I use fat free reddi whip (up to 4 tbsp for 0 points) and 3 tbsp of sugar free Mrs Butterworth’s syrup for 0 points.

        These pancakes are awesome!! It’s like eating dessert for breakfast. Well actually, I did eat the leftovers as dessert!! My hubby and son enjoyed these as well. What a great way to enjoy breakfast in the Fall. Thanks for a great recipe…it’s a keeper for my family.

    I’ve been wanting to make these for awhile and finally did on this lazy Sunday morning. They were definitely delicious! I did add an extra 1/4 cup water to the thick batter before mixing in the fluffed egg whites…it really helped. I still ended with 9 pancakes. Thank you for this Winner!
