What ingredients makes this No Bake Pumpkin Pie in a Jar Skinny?

The key to making these “Skinny” is swapping out high point ingredients for a lower point alternative:

  • Sugar free vanilla pudding ( 3-4 points per package) vs. the regular sugar pudding mix ( 23 points per package)
  • Caramel Premier or Pumpkin Spice Premier Protein cartons. You could also use Fairlife skim milk ( 2-3 points for 16 oz.) vs. whole milk ( 10 points for 16 oz.)
  • Land o’ Lakes light butter made with canola oil ( 2 points for 1 Tbsp) vs. full fat butter ( 5 points per Tbsp) for the crust 

These No Bake Pumpkin Pie in a Jar are so easy to make. All you need is a few ingredients and you’ll have Pumpkin Pie in less than 8 minutes. 

How do I make these Skinny No Bake Pumpkin Pie in a Jar?

In a large mixing bowl combine, pumpkin, vanilla pudding, and premier protein shake or Carbmaster or Fairlife skim milk.

Add pumpkin spice and set aside.

Stir until well combined.

In a separate bowl combine, graham cracker crumbs and sugar substitute.

Mix until well combined.

Drizzle melted butter over the the graham cracker crumbs and sugar. Mix all together until it thick like paste.

Layer eight  (8 oz.) mason jar with about 3 Tbsp graham cracker crumbles.

 Top graham cracker crust with pumpkin pie filling. 

Press down to make sure an even layer is created.

and 4 Tbsp fat free Reddi Whip. 

Repeat steps for remaining jars. 

Place lid on each jar and store in the fridge for up to a week.

  • 2 ( 1 oz.) package sugar free vanilla instant Jell-o pudding mix
  • 1 1/2  ( 16 oz.) cartons caramel protein premier shake or 2 cups Carbmaster or Fairlife skim milk 
  • 1 Tbsp pumpkin pie spice
  • 1 cup graham cracker crumbs
  • 3 Tbsp Land o' Lakes light butter made with canola oil, melted
  • 1/4 cup zero point brown sugar substitute ( I use Lakanto GoldenMonkfruit Sweetener)
  • Fat Free Reddi Whip 
  • 1/4 tsp cinnamon, for garnish

    1. In a large mixing bowl combine, pumpkin, vanilla pudding, and premier protein shake or Carbmaster milk. Add pumpkin spice. Whisk until well combined. Set aside.

    6. Top with 4 Tbsp fat free Reddi Whip. Repeat steps for remaining jars.

These were unbelievably delicious! I cut the recipe in half and somehow only ended up with 3 servings worth of the filling, but 4 of the graham crumble, so I just used the extra crumble and split it amongst the top of the 3. It adds another point to each but it was worth it!!

At the beginning of this recipe Info it calls for sugar free caramel sauce but nowhere in the ingredient list is it mentioned. Is it used in this recipe or is that a mistake?

Thanks for your comment. I've used the sugar free caramel as an optional topping for these but it's optional and not in the recipe. I will updated that.

These look so good. Can I make therm in 6 oz ramekin dishes, then add the whip cream when serving? Also, could I substitute almond milk for the premier protien?

yes, you can serve the in 6 oz ramekin dishes. The almond milk doesn't set up the pudding like regular milk or the premier protein does. You can use skim milk as a substitute if you prefer.
