How do I make these Low Point Sausage Stuffed Jalapeños?

I like to use mild Italian turkey or chicken sausage. The reason I use the mild is because not everyone loves the heat of a spicy sausage. I also love using chicken sausage since it is lower points in comparison to turkey sausage. It’s 10 points for 1 pound as compared to 20 points for 1 pound of the Jennie-o lean turkey sausage.

Preheat oven to 425 degrees

Cut and deseed the jalapeños. Set aside.

Spray a large skillet with non stick cooking spray. Cook chicken or turkey sausage over medium heat until it’s no longer pink; drain.

In a small mixing bowl combine the cream cheese, Parmesan cheese, and cooked sausage. Stir until well combined.

Spoon 1 Tablespoon of mixture in each jalapeño half.

Continue until all 40 half jalapeños are stuffed.

Place stuffed jalapeños on a baking sheet.

Cook uncovered for 20-22 minutes or until bubbly.

Serve with my Skinny Ranch Dressing!

Ingredients:

  • 1 lb. chicken or turkey sausage ( I use Isernios mild Italian chicken sausage)
  • 1 ( 8 oz.) reduced fat cream cheese
  • 1/2 cup grated Parmesan cheese
  • 20 large jalapeños, halved lengthwise and seeded

Directions:

  1. Preheat oven to 425 degrees.
  2. Cut and deseed the jalapeños. Set aside.
  3. Spray a large skillet with non stick cooking spray. Cook chicken or turkey sausage over medium heat until it’s no longer pink; drain.
  4. In a small mixing bowl combine the cream cheese, Parmesan cheese, and cooked sausage. Stir until well combined.
  5. Spoon 1 Tablespoon of mixture in each jalapeño half. Continue until all 40 half jalapeños are stuffed.
  6. Place stuffed jalapeños on a baking sheet.
  7. Cook uncovered for 20-22 minutes or until bubbly.
  8. Serve with my Skinny Ranch Dressing

Notes:

  • You can deseed and make filling 24 hours before. Just store filling in an air tight container in the fridge. Remove from fridge and allow it to sit at room temperature for 10-15 minutes before spooning it into the jalapeño halves.
  • The overall point value is the same whether you use chicken or turkey sausage

Your title gave me a chuckle. I thought I was reaching rock bottom during this quarantine, but I guess these jalapenos are feeling down, too.
