This BBQ Chicken Salad is my absolute favorite. Drizzle with my homemade Easy Skinny Ranch dressing takes this salad to a whole new level!

Servings: Makes 1 large salad

What makes this Skinny BBQ so good?

I’m a huge salad person. I could literally live off salads-especially this one- drizzled with sugar free BBQ sauce and my Easy Skinny Ranch Dressing.

The combination of the two really make this salad mouth watering delicious! 

What I love about salads is being able to switch up the ingredients that are used, depending on what I have available.

What can I add to this BBQ Chicken Salad?

Feel free to use this salad recipe as inspiration in creating your very own Skinny BBQ chicken salad-just the way you like it. 

Here are just a few that I love to add: corn kernels, black beans, avocado, cheese, red onions, tomatoes, tortilla strips, and/ or black olives.

G Hughes Sugar Free BBQ sauce

 

Ingredients:

  • 3 oz. raw boneless, skinless chicken tenders or cooked, diced skinless, boneless chicken 
  • 1/2 tsp BBQ seasoning ( I use Dak’s BBQueen Spice)
  • 1/4 cup frozen (thawed) corn
  • 1/4 cup canned black beans (drained)
  • 2 Tbsp G Hughes Sugar Free BBQ sauce
  • 1 cup iceberg lettuce, chopped
  • 1 oz. avocado, diced
  • 2 Tbsp ranch dressing ( I use my Easy Skinny Ranch Dressing)

Optional Toppings:

  • 1/8 cup light cheese  ( I use Trader Joe’s light 3 cheese blend)
  • black olives
  • diced red onion
  • diced tomatoes 

Directions:

  1. Spray a skillet with non stick cooking spray. Place chicken tenders in skillet and cook on medium heat until they are no longer pink. Sprinkle on BBQ seasoning.
  2. On a large plate combine lettuce, corn, beans, avocado, and any other optional toppings you’d like.
  3. Dice cooked tenders and add to salad.
  4. Drizzle bbq sauce and ranch dressing over the top.
  5. Enjoy!

Ingredients

  • 1/4 cup frozen corn kernels, thawed
  • 1/4 cup canned black beans (drained)

  • 1 cup iceberg lettuce, chopped
  • 1 oz. avocado, diced
  • 2 Tbsp ranch dressing ( I use my Easy Skinny Ranch Dressing)

Instructions
