Skinny Watergate Salad

This Skinny Watergate Salad is a skinny version to the classic Watergate salad-made with sugar-free pistachio pudding, marshmallows, nuts, and pineapple. It’s the perfect potluck recipe!

Watergate salad according to Wikipedia is referred to as Pistachio Delight or Shut The Gate Salad, or colloquially as Green Goop, Green Goddess, Green Fluff or Green Stuff, is a side dish salad or dessert salad made from pistachio pudding, canned pineapple, whipped topping, crushed nuts and marshmallows.

The recipe was first published by General Foods ( Kraft Heinz), to showcase two of their products: Jell-O instant pistachio pudding and Cool Whip whipped topping. But at that time (it was 1975, a year after Nixon resigned) the salad donned the name, Pistachio Pineapple Delight.

General Foods sent out the recipe to newspapers around the country and one unnamed Chicago food editor decided to change the recipe name to Watergate Salad to attract more readers.

To make this Skinny Watergate salad you will:

mix together two boxes of pudding mix with 1/2 cup unsweetened almond milk in large mixing bowl.

Whisk until well combined. Add drained pineapple.

Fold in cool whipped topping.

 Stir in marshmallows and chopped nuts.

Chill for at least 2-4 hours. Serve with fat free Reddi Whip and garnish with more nuts, if desired.

Ingredients: 

  • 2 ( 1 oz.) sugar free pistachio Jell-O instant pudding mix
  • 1/2 cup unsweetened almond milk 
  • 1 (20 oz.) can crushed pineapple, drained
  • 1/2 cup miniature marshmallows
  • 8 oz. container fat free Cool Whip
  • 1/4 cup chopped nuts  ( I use small walnut pieces )

Directions:

  1. In a large bowl, mix two boxes of pudding mix with unsweetened almond milk.
  2. Whisk until well combined. Add drained pineapple.
  3. Fold in cool whipped topping. Stir in marshmallows and chopped nuts.
  4. Chill for 2-4 hours be serving. Serve with fat free Reddi Whip and garnish with more nuts, if desired.
  • If you mix unsweetened almond milk with instant pudding by itself it will NOT set up-however in this recipe the combination of the cool whip and drained crushed pineapple-it does.

I love this! I'm addicted to it. I change it a little, I use less coolwhip and add fat free greek yogurt.
