WW Mini Apple Pie Cookies

How do I make these WW Mini Apple Pies?

Preheat oven to 375 degrees.

Open the can of apple pie filing. Pour filling into separate bowl.

Using a knife, chop apples from filling into small pieces.

Place chopped apples in with the filling. Add cinnamon and nutmeg.

Stir until well combined. Set aside.

In large mixing bowl cream together light butter, unsweetened applesauce and sugar substitute.

Add 1/4 tsp all spice, flour, salt and stir until just combined.

Spray a 24 mini muffin tin with non stick cooking spray. Spoon batter into each muffin tin.

Press down the middle of the dough using the back of a small spoon. 

Place a small spoon of apple pie filling in the center of each mini pies.

Bake for 10-12 minutes or until golden brown.  

Drizzle with sugar free caramel sauce, if desired. 

Store in an airtight container in the fridge for up to a week.

Reheat for 2-3 minutes in air fryer at 360 degrees or 30 seconds in the microwave.

  • The Lakanto Monkfruit Sweetener has a 1:1 ratio to real sugar. If you use a different sugar substitute you will want to use the equivalent to real sugar that is recommended on back of the sugar substitute package.

You can make your own apple pie filling using fresh apples.

  1. You would use 2 cups apples — peeled, cored, and diced, 2 tsp fresh lemon juice, 1.5 cups water, 3/4 cups granulated white sugar substitute, 2 Tbsp cornstarch,1/2 Tbsp cinnamon, 1/8 tsp salt, 1/8 teaspoon nutmeg.
  2. Then place cored, peeled, diced apples in a large bowl and toss with lemon juice.
  3. Place water, sugar substitute, cornstarch, cinnamon, salt, and nutmeg in a medium saucepan. Stir to combine then bring to a boil over medium heat, stirring often.
  4. Once the mixture boils, boil it for two minutes.
  5. Then add the apples, turn to a simmer, and cover.
  6. Cook, stirring often, until the apples soften, about 5-7 minutes.

Ingredients

  • 2 cups all purpose flour ( I use Gold Medal) 
  • 2 Tbsp Land o' Lakes light butter made with canola oil
  • 3/4 cup unsweetened applesauce
  • 2/3 cup white sugar substitute ( I use Lakanto Monkfruit Classic Sweetener) 
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp all spice
  • pinch of salt
  • 2 cups no sugar added apple pie filling- I use my Zero Point Apple Pie Filling or Wilderness No Sugar Added Apple Pie Filling 
  • Smucker's sugar free caramel sundae sauce for additional points, garnish

These turned out very good!! I did wonder about point value, I entered the ingredients into WW recipe builder and point value came out to 2 per cookie? I used everything listed and only substituted Swerve for the monk fruit, which was still 0.

Hi Dawn,

Thanks for your wonderful review. Here is the breakdown of the ww points that I used to get 1 point per cookie

Gold Medal Flour- 22 points Land o Lakes light butter- 4 points Wilderness Country Apple Pie no sugar added pie filling- 7 smartpoints

The other ingredients are zero points. Makes 24 servings. The whole recipe is 33 points divide that by 24 servings= 1.375 points per serving. The WW app rounds anything under .5 and round up if it's over .5.

Hope that helps! Keep in mind-the point value may differ depending on the brand of flour, light butter, or apple filling you use.

I made these yesterday in regular sized muffin tins. I substituted blended oats for one cup of flour. They are delicious. Because my cookie part was just a little underdone, I air fry the frozen cookie for 4 minutes at 370^. When I make them again I will probably partially bake the cookie cups before adding the filling.
